The production of beer, wine, juices and non-alcoholic beverages generates significant amounts of organic by-products, which fall under category 02 07 Waste from the production of alcoholic and non-alcoholic beverages (except coffee, tea and cocoa).
This group includes brewer's spent grain, grape pomace, yeast sediments after fermentation, fruit and vegetable pomace from juice production, as well as sediments and filter materials generated during the clarification and filtration of beverages. Since these residues have a high moisture content and are rich in organic matter, sugars and proteins, they are extremely prone to rapid fermentation and spoilage.
Environmentally sound management of such waste excludes uncontrolled disposal at landfills or discharge into open water bodies, as this leads to a sharp reduction in oxygen levels and acidification of the surrounding environment.
Due to their high content of nutrients, food industry enterprises are required to ensure proper record-keeping, temporary storage in sealed containers, and timely removal of such residues to specialized partners for further processing.
The most rational approach to the disposal and secondary use of these by-products is their bioconversion in the agricultural and energy sectors.
In particular, wet brewer's spent grain and pomace are widely used as high-protein feed additives in livestock farming.
